Strawberries are choc a block full of antioxidants, and so refreshing. They are in season right now, and at only about 60 calories for a tub, how could you say no?

Rolled Oat Bars

Well, it is official. We are going preservative and additive-free in an attempt to calm down my 3 year old daughter's behaviour, and in the mean time, it would actually be beneficial for the whole family, so that is what we are doing. I tried to find a commercial muesli bar that was failsafe, but could not find 1, so here is a additive and preservative-free recipe.

ROLLED OAT BARS (contains gluten)


1 cup self raising flour or wholemeal self raising flour
1/2 cup sugar
1 tbsp CSR golden syrup or pure maple syrup
2 cups rolled oats
150g butter or Nuttelex


Combine flour, oats, and sugar in a bowl. Melt butter, add golden syrup and mix into dry ingredients. Press into slice tray and bake for 15-20 minutes until brown.  Cut into bars while still hot, leave to cool before removing from tray. Makes about 20.

Strawberry & Chocolate Tart

Tonight's dessert was strawberry & chocolate tart, and omg, soo yummy.

Here is the recipe for anyone else wanting to try it.

Strawberry & Chocolate Tart


1 x 170g sheet reduced-fat shortcrust pastry
1 x 150g tubs Nestle diet Strawberry Yoghurt
1 egg yolk
3 tsp cornflour
30g dark chocolate, melted
250g strawberries, quarted


1. Preheat oven to 180C or 160C fan-forced. Lightly spray four 3/4-cup (185ml) muffin tin holes with oil. Cut four 10cm circles from pastry, discarding trimmings. Gently press pastry circles into prepared muffin tin holes (the pastry will only come half way up the sides of tin holes).


2. Place yoghurt in a medium bowl. Whisk in egg yolk and cornflour. Divide mixture among pastry cases, then bake for 20 minutes or until pastry is golden and crisp and filling has set. Cool tarts in muffin tin for 5 minutes, then remove and place on wire rack to cool further.


3. Using a teaspoon, drizzle chocolate in a zigzag pattern over tarts. Serve tarts immediately with fresh strawberries.

Greek Yoghurt Parfait

GREEK YOGURT PARFAIT

If you don’t have fresh strawberries, other fresh berries
work well. And if fresh berries are out of season, dried
berries will work, but use only 2 tablespoons.

1/4 cup sliced fresh strawberries
2 tablespoons low-fat muesli
3/4 cup fat-free Greek-style yogurt or low-fat vanilla yoghurt

Combine the strawberries and granola in a small mixing
bowl and stir. Spoon half of the mixture into a serving
bowl or parfait glass. Spoon the yogurt over the
granola mixture. Sprinkle the remaining strawberry-granola mixture on top.

Little strawberry pie's

Dessert tonight - Mmm, yummy :) Well, it smelt divine, and omg, tasted so good!!!


Too sick to do anything this week :(

Wow, I have just realised how long it has been since I last blogged, and also that my last blog before this one is what I am eating for dinner tonight. Is it the smell of Kangaroo that makes me feel the need to blog? Hmm, I don't know what it is, but hey, here I am.

I have been terribly terribly ill, and tonight is the first night in 7 days that I have actually felt like cooking, not that I could get away with not cooking any of the previous 7 nights, but have done so feeling dizzy, and shivering, and really really sick.

I have not been able to exercise at all this week, but I am just hoping that at some point during next week that I am able to. Will I be able to keep my personal training appointment this week, or not, I wonder?!?  She may think they are just excuses, but they are not.

Well, I hope to get back to it soon. I didn't join a new gym to sit at home dying...

Rich self-saucing choc pudding




It might be hard to believe but this rich, gooey chocolate dessert is low in fat. Now there is no reason not to make it.

Preparation Time

15 minutes

Cooking Time

20 minutes

Ingredients (serves 4)

  • 1 cup self-raising flour
  • 1/4 cup brown sugar
  • 40g reduced fat spread
  • 1 1/2 tbs sifted cocoa powder
  • 1 egg
  • 1/2 cup skim milk
  • 1/2 cup brown sugar
  • 1/2 tbs sifted cocoa powder
  • 1/3 cup boiling water
  • Reduced fat spread, extra, for greasing

Method

  1. Lightly grease 4 x 3/4 cup ovenproof dishes with reduced fat spread. Mix 1 cup self-raising flour, 1/4 cup brown sugar, 40g melted and cooled reduced fat spread, 1 1/2 tbs sifted cocoa powder, 1 egg and 1/2 cup skim milk in a bowl. Preheat oven to 170°C.
  2. Divide batter evenly among the 4 dishes. Combine 1/2 cup brown sugar and 1 1/2 tbs sifted cocoa powder. Sprinkle evenly over the top of the cake batter. Pour 1/3 cup boiling water over each dish.
  3. Place on a baking tray and bake for 18-20 minutes or until cooked. Let puddings stand for 5 minutes before serving.

Mountain Bread Lasagne

Mountain Bread Lasagne (249 Cals)

Serves: 6

Ingredients:
Olive oil spray
1 tsp Moroccan spice
3 slices whole wheat mountain bread (flat bread)
400gram can of lentils (rinsed, and drained)
200g premium low fat beef mince
2 garlic cloves, crushed
3 cups  tomato pasta sauce
100 grams baby spinach
100g reduced fat fresh ricotta
15g grated parmesan

Method:
Brown the mince in a large non-stick saucepan over medium-high heat. Add Moroccan spice. Add the lentils, and stir through.
Add the crushed garlic, and pasta sauce. Bring to the boil, and simmer uncovered for 20 minutes, or until thick.  5 minutes before the end of the 20 minutes, place 50grams of baby spinach, constantly stirring.
Preheat oven to 180c. Spread a small amount of the meat mixture onto the base of the oven tray. Place half the mountain bread over the meat mixture (cut to fit). Spread meat mixture over the top. Add the last half of the mountain bread. Top with spinach, ricotta, and sprinkle with parmesan.

Bake for 20 minutes.  Served with spinach.

Live like a celebrity for a day!

Monday started off stranger than any day I have had. 5.30am wake up. Make sure my suitcase was packed, with all my clothes that look good on me. I was told to pack smart casual, which I did. They wanted a little bit of colour, so I added that too. Camera was charged and packed, not really sure what to expect.

Fast-forward the trip. I arrive in Sydney, get to baggage claim and there is my driver holding a sign "ROSA GAUNSON" - Yay, that's me, so I wave! LOL. I am such a dork. Grabbed my suitcase, and he takes it for me to the car. Nice car, lexus, with leather seats. We start chatting, he tells me that I am on my way to become a household name, etc... If only! I start talking about Kylie Minogue, as I do. He tells me 2 months ago he had her in his car. Oh, so close. I tell him, I have 2 daughters named Kylie, and Dannii - funny stuff :) He then begins to tell me that he will tell Kylie all about me next time he sees her. Woohoo!! If only he would call me when she was in his car. Now, that would be cool. He tells me how nice she is, etc etc etc.

Then we arrive at Southern Star. Sylvia comes down, asks me if I bought the Melbourne weather with me? Has been raining ever since I touched down. I told her the sun was coming out just before take off. She then asks me if I have had any lunch as we are walking through the offices, and I see all the casting producers etc for Beauty and the Geek working in their cubicles. I will have a salad - how good am I?

I get in the office, then they ask me to pull out all my outfits, and then they get me trying them on. Eventually we agreed on my black/beige dress - my least favourite of the lot! lol.

Then it's time to start doing my hair, Virginia keeps popping her head in to sticky nose. (translated: see how we were going) lol. My chicken salad with dressing on the side come in. Aww Sylvia, I didn't even have to ask, and you knew about dressing on the side.  Managed to eat a few mouthfuls before we started on make up. At least I ate all my chicken so I wasn't starving by the time I eat dinner - 7.30pm on the plane.

After hair/make up is done, and I am dressed, I get driven to the studios of channel 9. Wow! I have my own guest pass too, which Sylvia let me steal. Woohoo! Now, the waiting game starts.

I think we waited for an hour before they let us go upstairs. The others went into the boardroom with the channel 9 executives - a roomful of suits as they call it!  I had to wait outside with Sylvia, and we chatted, about exercise, and food that I cook, etc. It turns out that I have inspired her to go to the gym, and she is actually going to go the next day before work. Oh yeah, go me!

My turn to go in. The big boss directed most of the questions to me. I talked about how much weight I had lost in 12 weeks (21.1kg) And how I had done it on my own, with the support of others doing it at the same time. How I had gained all this confidence from losing the weight. "hell, I'm in here talking to all you right now!" I talked a lot about Zumba, and how at the start when I was going to the gym, I had trouble burning anywhere near 500 calories a day, until I discovered Zumba, and found that I could burn 600 calories an hour, and now I can burn 800 calories. I told them that it is possible to lose weight through diet and exercise and that I was living proof.

Virginia told me after we left that room that I was perfect, and that they were all very impressed with me. They had my fat photos, and my before and after pics in my bikini!! Ewww....

So, basically they were trying to pitch an idea for a show to the channel 9 exec's, and as they said I was their secret weapon. They wanted to show/prove that weight loss can be achieved through diet and exercise, and you don't need lap band surgery to get there. At the end of the meeting, Rory said that all I had to do now was put all the weight back on, and I could come on their show. Arrgggh, No way!!!!

That was my story about an expense paid trip with pampering for a day.

I am not officially doing round 2 of the 12wbt, but I am still doing all the measurements, weigh-in's, before and after photos, and yes, possibly even the fitness test.

I am not game to post my before pic, as it is in my underwear - maybe I will post it with a before and after pic at the end.

OMG, Dessert last night!!!!!!!!

Wow, I simply cannot believe how delicious dessert was last night. Berry swirl cheesecake! So easy to make, and omg, so delicious. It was such a huge hit at my dinner party last night. No biscuit on the bottom, but it sure tasted like it had, and the strawberry jam surprise at the bottom. Mmmmmm.....


I have included the recipe if anyone out there wants to try it also.


Berry swirl cheesecake



Cheesecake — one of the most sinful desserts — comes over all angelic in these delicious low-fat berry versions.

Preparation Time

15 minutes

Ingredients

  • 600g low-fat ricotta
  • 220g ctn low-fat cream cheese
  • 1 tsp finely grated lemon rind
  • 1 tsp vanilla essence
  • 1 egg
  • 100ml honey
  • 90g (1/4 cup) raspberry jam, warmed
  • Fresh berries, to serve

Method

  1. Preheat oven to 140°C. Line twelve 80ml (1/3-cup) capacity muffin pans with paper cases.
  2. Process the ricotta, cream cheese, lemon rind and vanilla in a food processor until smooth. Add the egg and honey, and process until just combined.
  3. Divide ricotta mixture evenly among the cases. Top each with 1 teaspoon of jam and use a skewer to swirl. Bake for 20 minutes or until just set. Set aside to cool completely.
  4. Cover with plastic wrap. Place in fridge for 3-4 hours to chill. Top with berries.

Notes

  • Cook's tip: To test whether the cheesecakes are cooked, lightly touch the centres to see if they feel firm on top; the centres will gradually become firmer as the cheesecakes cool.

Zumba!!

I have been so lazy with this blog. :( Oops!

Been doing really well. Lost 20.1kg to date. Last Saturday we were invited to our friend's place for dinner, so I did 2 zumba classes, so that I could indulge in dinner, and wine and dessert, and wouldn't you know it in the morning I had actually lost weight! Totally worth it.

I have been doing zumba classes a lot lately. I love it! It is such an awesome work out, and I love the music! Burning an average of 600 calories per class, which is more than I burn in other classes.

On Saturday we have our 2nd mini milestone, so I will be doing 3 classes - oh help me! One of those classes happens to be a 1.5 hour boxing class - argh! I have never done boxing so I have no idea how sore I will be. I am thinking Saturday night will be spent in bed.

Woohoo, another good weekend!

I was very surprised with the scales this morning to be honest with you. I tried to be good at the barbecue we went to yesterday. There were dips and biscuits, cheese, cabana and carrot and celery sticks, so I did stick to the carrot and celery sticks with the dip - not bad.

When the BBQ was cooked, I put 1 sausage, a dinner roll, and salad, tomato's and the smallest serve of coleslaw. But, at the end of the day I did indulge in a small dessert. I am not even sure what it was, so couldn't even add it to my food diary - I was counting calories while I was there, tracking my calories through my iPhone.

In the evening, I made myself an eggplant parmiagana, and didn't eat anything else for the day. Woke up, and I had gone down 200grams since I woke up, which was great, especially since it was a no exercise day. Go me!

What a great weekend!

Well, meeting Michelle Bridges on Sunday at Chadstone Shopping Centre was really an amazing experience!

A few things I remember from our conversation. Michelle telling me that I am perfect that way that I am, we are just going to make a better version of you. Also, I told her that I had already lost 6.5kg's just following the recipe's in her book, and she said that I am going to rock this round, to which I responded, Yes, I am! :) She is so nice, and friendly, and obviously she cares about people.  But seriously I am glad that our training session with Michelle is at the end of the 12 weeks, because I really believe I will need the 12 weeks to train just for the session with her!!! Scared much???

On another note, the weekend worked out not too bad. They had peppercorn sausages and rissoles at the bbq, which were only 100cal. I did not too bad at my Mum's and the next day only went up 100 grams. Woohoo. I have lost 2kg since Weigh in last week. I am wrapt! Slowly creeping up to my hubby's weight, and he is tall and skinny. Yay, go me!

Downhill since Valentine's Day

Well, I think it is time for another post. Last Saturday night we had friends over for dinner. I made entree, main, and dessert. All healthy, and all from Michelle's Crunch time cook book. I think I may over over-indulged with the dip. I didn't even really have all that much. Oh, it could have been the cheese. I worked out how many calories I would consume and made an effort to burn those calories off before the night started. Well, I went up about 100 grams, not so bad.

I think the bad day happened to be Valentine's Day. We had lunch at The Press Club in Melbourne. We had the sharing menu... Looking back it would have been better if we had just ordered a main. It may have been the yummy olive bread they serve. And they keep serving it too, which doesn't help. And dipping it in oil and salt - really can't help!

Well, it has been almost a week now, and I am still not down to my lowest, which was right before that meal on Saturday night. I am almost there - only 200 grams away!

I am strict with myself during the week, but I am bad in if I have a taste of something sweet and yummy, I can't just stop of having 1, that's why I try and avoid that stuff altogether.

Well, this weekend is my step daughter's birthday, which is being held at her Aunty's house. Now, I do not want to go backwards again, and especially so close to kick off! I think I will make my own lunch and take it over there. Oh my, I just remembered we are going to my Mum's for dinner that night too.... Hmmm... This woman's favourite saying is "I no cook much!" which is far from the truth. In fact, she cooks enough for a small African village. <-- This is going to be difficult to conter-act. Ok, no bread or cheese before dinner. She usually serves that when you get there, and you fill up on that you don't feel like dinner. And I think, if there is pasta I will just eat half my serve! Any other tips please don't hestitate to help me out.

A bit of a naughty weekend, but triumph!

Well here I am. I haven't written for a while. Well, on the weekend we had our daughter's 3rd birthday party, which I was very concious about the food I would eat and how much exactly. I actually was very proud of myself. I bought some kanga bangas, which went down a treat. Let's just say there were none left, and I bought 2 packets to the barbeque. But the icky ones that were full of fat did come back home, I have sinced thrown them in the bin. I had 2 kanga bangas with bread, and salad, and 1 chicken kebab.

We had friends bring slices, and I thought I was good just having 1 little slice.... Until we got home of course. Well, they sent those slices home with us, and I was a bit naughty, every time I went past the fridge I would grab one, big mistake. In the morning I weighed 800grams more on the scales. Well, I was a bit cross with myself, so the next day I was very strict with my diet, and low and behold, the next day on the scales, I had lost all of those 800 grams that I had put on. Bonus!! When I am focused I can be extremelly strict with myself, and not touch anything sweet or eat too much, which is what happens most days, but if I taste 1 sweet thing, I kind of go overboard like I did on Saturday night. I have since thrown out all left over food from the party, so there is nothing but healthy food left in the fridge or pantry.

Success

Wow, I can't believe the great success that I have had on Michelle Bridges 12 week body transformation program so far. I am still doing pre-season, which is all about mind set, and getting your mind into the right place to guarantee success, and I have already lost 5 kg, I am stoked!

Even though I didn't do any exercise yesterday, and to be honest I made some toast late at night, I didn't think that I would go down 900grams, but wow. I just need to not get complacent thinking that I don't need to exercise. I still need to make sure I do some everyday, in fact I should be doing some now. Thank god for air con in the house. Off I go, hopefully another great day, and in the morning the scales will be my friend again.

A serious triumph

This last weekend was a very strong weekend for me.
We went to my Husbands’s best friend’s house. Now, bear in mind whenever we have gone there in the past they make things like pancakes, bacon, eggs, waffles, etc for breakfast, they have about 4 or 5 desserts with dinner, lunch is filling, and usually have have afternoon tea as well, but everyone is full to the brim from breakfast anyway. They serve enough food to feed an African village, or maybe even more.
I went there with the intention to hopefully not put on any weight. Was going to only eat vegies, and definitely no dessert, despite everyone else doing the same thing. The last time I went there, I came home 3 kg heavier, so I was very wary if I could actually do it.
Well, I did it, I had baked potato, without the sour cream or all the other naughty things that were provided. Instead of fried bacon and pancakes for breakfast, I ate just right, and 1 slice of toast with sliced tomato. I even avoided all the desserts, the good thing is I could sit there and watch others eat the delicious looking desserts, and I didn’t even feel tempted at all.
The first day there I went for a 1 hour walk, and the 2nd day I went on 2 bike rides, totalling 90 minutes, and on our final day we went after breakfast, thank god!
This morning I weighed myself, and to my surprise and delight, I was half a kilo lighter!! If I can lose weight there, I can do ANYTHING!
